IMG_2878Apricot and Chocolate Chip Cookies
Today we have made some delicious chocolate and apricot cookies. If you would like to make them at home, here is the recipe:

85g butter
2tbsp granulated sugar
55g light brown sugar
½ tsp vanilla essence
1 egg, beaten
175g self raising flour
115g chocolate, roughly chopped
115g dried apricots, chopped

1. Place the butter, sugar and vanilla essence in a bowl and beat together. Then, gradually beat in the egg until the mixture is light and fluffy.
2. Sift the flour over the batter and fold in. Then fold in the chocolate and apricots.
3. Put tablespoons of the cookie batter onto 2 greased baking sheets, allowing space for the cookies to spread. Bake in a pre heated oven, 180 degrees C, for 13-15 minutes.
4. Allow to cool and enjoy!
